  • Ground beef (80/20) — 480 g
  • Brioche buns — 240 g
  • Bacon — 120 g
  • Cheddar cheese — 80 g
  • Mayonnaise — 60 g
  • Ketchup — 40 g
  • Lettuce, tomato, onion — 100 g

The carnivore version

Carnivore

  • Ground beef (80/20) — 480 g
  • Eggs (fried, in place of the bun) — 4
  • Bacon (cured with salt only, no added sugar) — 120 g
  • Cheddar cheese (optional) — 80 g
  • Beef tallow or the bacon fat, for frying — 20 g
  • Salt

Dairy is the most debated food on carnivore, so the cheddar here is optional.

Our steps

  1. 1Cook the bacon in a large skillet until crisp; lift it out and keep the fat in the pan.
  2. 2Divide the beef into 4 patties, with nothing mixed in.
  3. 3Fry the patties in the bacon fat (add tallow if needed) over medium-high heat until a crust forms, 3–4 min a side. Salt both sides at the end. If using cheddar, lay it on for the last minute and cover the pan so it melts.
  4. 4Fry the 4 eggs in the remaining fat.
  5. 5Stack each patty with the bacon and a fried egg on top. No bun, no sauces, no vegetables.
