Ingredients

- 3-4 arugula
- 2 cups of rice & quinoa mix
- 4 cooked chicken breasts
- 2 apples, chopped
- 4 oz goat cheese
- 1/2 cup chopped pecans
- 1 pomegranate (optional)
- 1/2 cup balsamic vinegar
- 3 tbsp mustard
- 1 tbsp honey
- 1/2 cup olive oil
- salt and pepper
Instructions
- Preheat the oven to 400 degrees.
- Wash and cut the sweet potato in half lengthwise. Cut each half lengthwise one more time, and then cut into thin slices.
- Add the sweet potatoes to a baking sheet lined with parchment paper. Spray with a little oil and season with salt and pepper. Roast for 40 minutes.
- Brine the chicken for 15 minutes. Rinse it with cold water and pat dry. Rub with olive oil and add salt and pepper on both sides. Bake at 450 degrees for 15-18 minutes. Leave to rest for 15 minutes.
- Cook the rice & quinoa mix according to the package instructions.
- Cut your cooked chicken and apple, and pull the goat cheese, pecans and pomegranates out.
- In a jar or measuring cup, combine balsamic vinegar, olive oil, honey and mustard. Whisk to combine.
- It's time to assemble! Mix the arugula, sweet potatoes, chicken and apples. Pour over the vinaigrette. Serve on top of rice and sprinkle with pecans, goat cheese and pomegranates.
Diet-by-diet
Rich in vegetables, whole grains, fruit, and lean chicken with heart-healthy olive oil; goat cheese and added honey slightly raise sodium/sugar but overall aligns well with DASH principles.
Features olive oil, greens, fruit, nuts, whole grains, and lean poultry with a small amount of dairy — hallmark Mediterranean components. Balsamic-honey-mustard vinaigrette fits the pattern.
Contains chicken, goat cheese, and honey, disqualifying it as vegan despite the plentiful plant-based ingredients.
Chicken is the only carnivore-appropriate element; the bulk of the bowl is grains, fruit, greens, and legumes-adjacent items, which are excluded.
Sweet potato, apple, pecans, arugula, and chicken are paleo-friendly, but rice, quinoa, goat cheese, and honey-mustard dressing pull it out of strict paleo alignment.
Sweet potatoes, rice-quinoa mix, apples, pomegranate, and honey make this too high in carbohydrates for keto despite the olive oil and chicken.
Apples, pomegranate, and honey are high-FODMAP; sweet potato and pecans have moderate thresholds. Not suitable for a strict low-FODMAP plan.
Rice, quinoa, goat cheese, and honey all violate Whole30 rules, even though the chicken, sweet potato, greens, apples, and pecans are compliant.
Reasonable balance of lean protein (chicken), low-glycemic carbs (greens, apple, sweet potato, quinoa), and monounsaturated fats (olive oil, pecans) fits Zone macros well.
Olive oil, arugula, pomegranate, sweet potato, pecans, and lean chicken are anti-inflammatory staples; only minor concerns from added honey and goat cheese.
High fiber from vegetables, quinoa, apple, and pecans plus lean chicken protein supports satiety and steady glucose, aligning well with GLP-1-friendly eating; portion of dressing adds calories.
